Cooking With Shiso: A Taste of Tradition in Asian America


Celebrate Tradition and Identity/Learn and Create/Savor Flavors: scallion pancakes (蔥油餅: cōng yóu bǐng) and Taiwanese beef shank rolls (牛肉捲餅: niu rou jian bing) 

Experience the legacy of shiso, the fragrant herb cherished across Asian cuisines, in this immersive, hands-on workshop. Guided by Stephanie Hsu, owner of Shiso Foods, we’ll discover the flavors that defined her Chinese-American childhood and continue to bring comfort to Asian communities throughout the Hudson Valley. Come ready to cook, taste, and celebrate the rich legacy of this treasured herb in a morning of storytelling and community.

Participants will:

- Harvest fresh shiso herbs from our gardens.

- Learn from a hands-on demonstration of scallion and shiso pancakes, stir-fried cucumbers and shiso, and Taiwanese beef shank rolls.
-Savor the pleasure of preparing and sharing a meal infused with the essence of shiso.

Stephanie Hsu is the chef and owner of Shiso Foods LLC, a Hudson Valley-based pop-up and catering business specializing in Chinese, Taiwanese, and Asian American comfort food. Shiso Foods is the creative outlet for Stephanie’s lifelong obsession with cooking, commensality, immigrant foodways, and their impact on identity and culture.  A graduate of the Culinary Institute of America, Stephanie has fileted giant halibut caught off the coasts of Big Sur, hand-rolled pasta at a vegetarian agriturismo in Italy, and plied preschoolers with locally sourced puerco en salsa verde for lunch. Now settled in New Paltz with two kids, four chickens, and an Alaskan malamute, Stephanie is going back to her roots to bring comfort foods from both her childhood and of those of Asians across North America to the Hudson Valley.
